Cantuccini

The Cantuccini are a very common recipe in Italy. They are from the region of Toscany and they can be filled with almonds, chocolate chips, raisins and more! The most common ones are with almonds but their particularity is that they are very dry and hard. Perfect for breakfast, Cantuccini are very simple to prepare and loved by everyone!

Degree of difficulty: easy

Preparation time: 10 minutes + 45 minutes in the oven

Ingredients:

  • 250g white sugar
  • 3 eggs
  • 250g white flour
  • 1/2 teaspoon baking powder
  • 200g shredded almonds
  • 50g almond flour
  • 100g dark chocolate (optional)
  • 100g raisins (optional)

Instructions:

  1. Whisk in cream the eggs with the sugar. Add the flour and the baking powder.
  2. When the dough is smooth, add the shredded almonds, the almond flour and the filling you most desire.
  3. Heat the oven at 180°C
  4. In a tray covered with parchment paper place a bit of the dough in a rectangular way and brush it with an egg yolk. Place in the oven for 45 minutes.img_9901
  5. When is ready, wait 5 minutes and cut the cookies in a diagonal way and they are ready to be eaten!img_9906
