Pumpkin Pie

The Pumpkin Pie is a classical american pie mostly eaten in the fall period (october and november). Is made by a crunchy base and a pumpkin cream full of flavors! Is not difficult to prepare and I suggest you all to try it 🙂

Degree of difficulty: medium

Preparation time: 

For the cream= 30 minutes

For the base= 10 minutes + 30 minutes in the fridge + 1h in the oven

Ingredients:

For the cream

  • 400g pumpkin pulp
  • 2 eggs
  • 100g brown sugar
  • 20g honey
  • 20g grated ginger
  • 3g grated nutmeg
  • 2g cinnamon powder
  • 150g cream

For the base

  • 250g white flour
  • 110g cold butter
  • 110g icing sugar
  • 1 eggs + 1 yolk

For the decoration

  • cookies from the remaining dough
  • whipped cream (cream + 1 spoon of icing sugar)

Instructions:

  1. Start with the base mixing the cold butter with the flour. Add the icing sugar and eggs.
  2. Close the dough with plastic paper and place in the fridge for 30 minutes.img_9410
  3. Meanwhile place the pumpkin (already peeled and cutted in long and large slices) in a steam for 15-20 minutes, it must be soft, then mash it and let it cool.
  4. When the pumpkin it’s getting ready, mix the ingredients for the cream: the sugar with the eggs and then the honey, ginger, nutmeg and cinnamon.
  5. Heat the oven at 160°C.
  6. When the pumpkin cream is cold add it to the cream.
  7. In an other bowl whip a little bit the cream and add it to the custard.img_9415
  8. Start rolling the dough.
  9. Place the dough in a baking pan for tarts already buttered and floured.
  10. Add the cream on it and place in the oven for 1h approximately.
  11. With the remaining dough make some cookies to place on the pie when is ready ready 😉
  12. When the pie is done, you could do some decorations whipping the remaining cream with one spoon of icing sugar and with the cookies on it, enjoy! (remember to place the Pumpkin Pie always in the fridge)
