Lemon Pie

Lemon Pie it’s a very easy recipe to prepare. It is very common around the world and it’s normally prepared with a crunchy base, a lemon cream and a decoration made of meringue. In this recipe I will show you how to prepare this amazing pie in only few steps! 😉

Degree of difficulty: medium

Preparation time: 

For the base= 10 minutes + 5 minutes in the oven

For the cream= 10 minutes + 5 minutes in the oven

For the meringue= 10 minutes + 3 minutes in the oven

Ingredients:

For the base:

  • 200g chopped vanilla cookies
  • 70-80g  margarine

For the cream:

  • 1 jar of condensed milk
  • 3 egg yolks
  • zest 1 green lemon
  • juice of 3 green lemons

For the meringue:

  • 3 egg whites
  • 1/2 cup white sugar

Instructions:

  1. First of all let’s prepare the cream by mixing the eggs with the lemon zest and juice.IMG_7923
  2. Then add the condensed milk and set apart.IMG_7924
  3. Heat the oven at 180ºC.
  4. For the base mix with your hands the vanilla cookies and the margarine and place in a openable circular tin.IMG_7925
  5. Bake the base for 5 minutes.IMG_7926
  6. Place on top of it the cream and bake for another 5 minutes.
  7. Now set the pie apart and prepare the meringue by whipping very well the egg whites.
  8. Then add 1/3 of the sugar and mix, add the rest of it and mix again until it is very smooth, absorbed and compact.IMG_7930
  9. Place the meringue in a pastry bag with star-shaped mouth and make your own decoration.
  10. Place 2-3 minutes in the oven until the meringue it’s browny, let the pie cool and place in the fridge! Enjoy 😉IMG_7934
